Quarantine Homemade Spaghetti-os

On day 34,3597 of working from home I desperately needed some comfort food. I reverse engineered Deb’s, Smitten Kitchen, quick pasta with chickpeas and turned it into Spaghetti-os.

1-2 Tbls. olive oil, heated to shimmering over medium heat in a medium sauté pan
1 large clove of garlic, just crushed slightly into 2-3 large pieces. Add to oil and let pop away until fragrant
3-4 Tbls. tomato paste, add to pan and smoosh around for a moment
add 1/2 tsp. salt and a small pinch of red pepper flakes (big pinch if you’re brave!) and/or a shake of black pepper
add 1 cup of small pasta, Creamette “rings” or “large rings” if you live in the North, “annelini” or other small ring pasta if you live somewhere with access to actual Italian food.
add 2 and 1/4 c. of water (a bit more if you like it saucy)

Bring to a nice simmer over medium-low heat, stirring occasionally. Simmer for 10-15 minutes until pasta is al dente. Fish out the garlic pieces (I clearly forgot) and discard. Eat at your desk.

Options: swap out 1/2 the pasta for a can of drained chickpeas OR simmer with a bit of parmesan rind (delish) OR finish with parmesan OR add dried Italian herbs before simmer or fresh herbs after.
